Publish your app using scheduled publishing
Scheduled publishing allows you to make changes to your app so that they are reviewed and processed rather than published immediately. You can set when your changes will be published to Google Play after they are approved.
Scheduled publishing is especially useful for apps with a long review time, such as apps submitted with a new developer account or apps submitted by developers participating in the App for Family (DFF) program. You can also easily publish app updates at specific times. Scheduled publishing is useful for tailoring ad campaigns, launch events, and new APK releases to your app's store listing or distribution changes.
Important note about scheduled posting:
Scheduled publishing is only available for updates, not the first time you publish your app. To use scheduled publishing, your app must already be published.
To use scheduled publishing for production releases, we strongly recommend that you publish your app to a private test track first.
If you select scheduled publishing, updates must be processed before publishing. Please allow up to several hours for processing (up to 7 days in exceptional cases), depending on app review time.
Tip: We recommend adjusting your plan to include a minimum of one week after you submit your app for publishing.
Changes made during Scheduled Publishing mode cannot be reversed, but new changes will overwrite pending changes.
All other updates, including updates submitted using the Google Play Developer API, changes to your store listing page, distribution to new countries / regions, and binary releases will not be published until you click Publish.
You can't enable or stop scheduled publishing while your app is processing.
Scheduled publishing is not available if there are existing, pending submissions.
Most changes are posted after a scheduled post, but there are some exceptions, including but not limited to:

Add release notes to the "What's new in this version" section of the app

Step 1: Enable Scheduled Publishing
Sign in to the Play Console.
Select an app.
In the left menu, select App info.
Note: You can enable scheduled publishing on several pages in this section, including store listings, pricing, and distribution.
At the bottom of the screen, click the Scheduled publishing switch to enable scheduled publishing. The switch turns blue when scheduled publishing is enabled.
In the "Publish Schedule" dialog box, review the details and click Settings.
Step 2: Update the app:
After updating your settings, go to the bottom right of the screen and click Submit Update.
Note: Updates can take several hours to process (up to seven days or more in exceptional cases), depending on the review time that applies to your app.
Click Review Change Log to review the update.
Step 3: Publish your app update:
Once the update is processed and ready to be published, look for the "Scheduled publishing" header at the top of the page. Publishing to the right of the header will not be enabled until the app has been reviewed and approved.
If your app is approved, review the change log and select Publish. The update will be posted to Google Play within minutes.
